Fennel/Zucchini Salad

Ingredients 1 pound(s) (2 to 3 medium) zucchini 1 bulb(s) fennel, quartered and cored, fronds reserved 2 tablespoon(s) extra-virgin olive oil 2 tablespoon(s) lemon juice 3/4 teaspoon(s) salt 1/4 teaspoon(s) freshly ground pepper 1/4 cup(s) slivered red onion 6 tablespoon(s) shredded Manchego or Asiago cheese Directions Very thinly slice zucchini lengthwise into long strips with a vegetable peeler, mandoline, or knife. Oven Baked Zucchini Fritters

Ingredients: 2-3 zucchini, grated 3 eggs 0.5 cup cheese, preferably feta or chevre 0.25 cup fresh mint ½ bunch parsley 1/3 cup dill 2-3 green onions 2 tsp baking powder 0.25 cup olive oil 1.5 to 2 cups flour 1 tablespoon ground pepper 1 tablespoon pepper flakes (if you want it hot) Salt to taste Put all the ingredients in a bowl. Mix well. Pur the mix into a greased oven pan. Bake at 375 for approximately an hour. Serve hot or with yogurt on the side.

Zucchini Pizza

Tired of just sauting or roasting your zucchini? Here is an interesting recipe. Simply slice the zucchinis in half. Hollow them out some with a spoon to remove the seeds. Rub with a bit of olive oil and bake at 350 for 20 to 30 minutes until it starts to get tender. Zucchini

This ubiquitous vegetable of summer can become rather uninteresting.  Properly used, however, it can be quite tasty.  Slice the zucchini creating round pieces about ¼ inch thick.  Fry the rounds in a combination of butter and oil.  Keep the heat just high enough to color the edges and make the outside a little crisp without burning pieces. Slat and pepper and add some fresh herbs to give it a little boost.

Pasta with zucchini and bread crumbs

Wedges of cabbage, trimmed of the core but still held together is a great vegetables. Place the wedges with a quarter inch of water in a pan for which you have a tight fitting lid.  Place over medium heat.  Bring the water to a boil and lower the heat. Check often and add more water if necessary.  There must always be water covering the bottom of the pan.  Cook until the cabbage is tender but still retains a little crunch.  Remove the wedge of cabbage and let them drain for a minute.  Season with salt and pepper and
