Peel turnips and cut them in half from top to bottom. Slice each half across to create half circles. Blanch the slices in boiling salted water for 2 minutes. Refresh in ice water. Dry the turnip slices in a clean towel.
Saute the slices in butter for 3-4 mintues turning them to color both sides. Add a couple of teaspoons of brown sugar. When the sugar has melted with the butter add enough water to nearly cover the slices. Continue cooking

3 md White turnips, slice thin
1/3 c Celery tops, chopped fine
1/3 c Oil
3 tb Cider vinegar
1/2 ts Salt
1/4 ts Pepper

Turnip, Onion And Rice Soup Recipe
Ingredients
- 1½ cups rice, washed
- 2 turnips, washed, quartered
- 4 onions, peeled
- 7 cups water
- 1 cup milk, scalded
- Seasonings to taste
Instructions
- Boil all ingredients together, except milk, slowly for 1 1/2 hours.
- Mash well with a potato masher, add scalded milk and serve.
- If too thick, add more scalded milk.
Grated Turnip and Apple Salad
1 c Peeled & grated raw turnips
1 c Peeled & grated tart green - apples
1/2 c Chopped fresh parsley
Juice of 1 large lemon
1 tb Vegetable oil
Salt & pepper
Combine all the ingredients. Toss wll & chill, covered in the refrigerator.

TURNIP MASHED POTATOES
Use a ratio of 2 parts potato and 1 part turnip. Cook as you would for any version of mashed potatoes.
Pass the cooked potatoes and turnips through the food mill. Add butter and cream; salt and pepper.
Optional: Add some finely minced parsley when folding in the cream and butter. For a less heavy version, use milk or even skim milk instead of cream.

Stewed Turnips
Ingredients:
1 pound of turnips
1 pound carrots
2 cups stock
1/2 onions
Saffron
3/4 tsp salt
2 tsp sugar
1/4 tsp cinnamon
1/4 tsp ginger
Instructions:
Wash, peel, and quarter turnips (or cut into eighths if they are large), cover with boiling water and parboil for 15 minutes. TURNIP SOUP
To begin, keep in mind that none of the measures need to be exact. Add more carrots or a couple of apples, peeled and diced, for a little sweetness.
When peeling turnips use a knife to remove a thick peel as some bitterness rests near the surface—so we are told. If you use a vegetable peeled do a double peel. Peel once, peel a second time.
It is important to have a heavy bottom pan with a lid that fits well.

Turnips with (or without) Greens
I ran across this recipe a few weeks ago, and I bookmarked it for the next time we had turnips. So here you go, from the Healthy Eating for Ordinary People blog.
Feel free to leave out the greens if you're using ordinary supermarket turnips. But if you've got some, by all means use them. They're GOOD and will make you feel like a Good Girl (or Boy). Like you are doing the Right Thing.
