Sweet Potatoes, Apples, Onion and Carrots

After having had plenty of pureed sweet potatoes during the Thanksgiving Holidays here is an interesting variation.  Thanks to chef Adam Lambert of BarCento who gave me the idea.   Peel and dice equal amounts of sweet potato, apple, onion and carrot.  This should be a small dice.  Combine the sweet potato, onion and carrot in a sauté pan with olive oil and some dried thyme.  Keep the heat at medium or medium low.  The idea is to soften the vegetable without

Roasting Vegetables

Most veggies that we put in the bag can be roasted.  Roasting brings out different flavors and qualities in the veggies.  It is my favorite way to eat many veggies.  Here are some of the things in this year's bag that would be great roasted.  I generally use a temp of 325 for nearly all my veggies.  I hear that root veggies might need a higher oven, but I have good success with lower temps and longer cook times. Spicy Potatoes and Cauliflower

Ingredients

  • 1 head cauliflower, broken into flowerets
  • 2 medium potatoes, skin removed and cut into 1 inch pieces
  • 2 medium sweet potatoes, skin removed and cut into 1 inch pieces
  • 2 tablespoons olive oil
  • 1 teaspoon fennel seeds
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon red pepper flakes, crushed
  • 3/4 teaspoon turmeric
  • 1 teaspoon coriander
  • 1 teaspoon sea salt

Sweet Potatoes and Apples

If you still have apples and sweet potatoes in your pantry, try this dish as a way to use them up.  Peel and boil your sweet potatoes until tender.  Slice.  Slice your cored apples.  In a buttered baking dish, layer the slices.  Mix equal parts sorghum and hot water.  Sprinkle with cinnamon and a dab of butter.  This is a great side dish with pork chops.  This is an easy recipe to remember.  For each potato use one good sized

Black Beans and Sweet Potato

Thanks to the awesome Diane Virosko for this recipe.   Ingredients 1lb dried black beans about 2 cups, rinsed and soaked over night 1lb smoked ham hock or shank 2 bay leaves 4t olive oil 1 yellow onion shopped 1 medium sweet potato chopped into 1/2 inch pieces 1/2 carrot chopped fine 1 celery rib, chopped fine 1/2 tsp cumin 1 tsp chile powder 2 cups chicken stock(I used ham stock) I put the bay leaf in with my beans, and cooked the hock with the rest of the ingredients in the crockpot. Twice Baked Sweet Potato

Bake your sweet potatoes on a cookie sheet in an oven at 350 for about an hour or until very soft. You may wrap in each in foil to retain extra moisture. Scoop out the flesh. In a bowl, combine with brown sugar, butter, and whipping cream/milk/sour cream/cream cheese (your choice). Season with cinnamon, nutmeg, and black pepper to taste. Put back in the shells of the sweet potatoes and rebake for another 20 minutes.

Cold Sweet Potato Salad

Try something different with your sweet potatoes. Peel 2 to 3 sweet potatoes and cut them into about 1 inch slices lenghthwise on the potato. Grill it on an open flame grill over medium flame for about 10 to 15 minutes until tender. Remove from heat and cut the slices into thin strips.
