Grilled Tofu

- 1 lb of firm tofu
- 1/4 c of orange juice
- 2 ts of low-sodium soy sauce
Tofu, once pressed, grills beautifully.
Slice the block of tofu in half, then slice each half into four thick slabs. Place a double layer of paper towels on a cutting board set over the sink. Arrange tofu in one layer on the cutting board, then top with a clean dishtowel. Place a second board on top, then a 4 to 5 pound weight,

Beer Can Chicken
One of the most common questions I get is “what do I do with a whole chicken.” As one of my favorite farmers would say, “Well __ __, you eat it. The problem with you is your try to make everything gourmet. Just eat the dang thing.”

Mirai Sweet Corn
This week’s variety is called Mirai. This variety was developed in Japan in the 1990s and has only recently made its way to the US. It is a hybrid, meaning that it is a cross-breed of different existing varieties. The Mirai corn is, by most accounts, considered a super sweet corn. However, the seed company prefers to think of it is a true “natural selection” of the best characteristics of Sugar Enhanced, Super Sweet, and Standard type sweet corns.

To grill or not to grill? A study on pork chops…
Heat the oven to 350. Saute the pork chops in
butter over medium high heat. You want to get
a nice golden brown on each side of the chops
and then move them to the oven to finish
cooking. The cooking time will depend on the
thickness of the chops. Check often after placing
the chops in the oven. Press the center of the
chop. When it begins to firm up it is cooked
enough. Try to avoid over cooking. Bring the
chops from the oven. Season with salt and
pepper. Place a teaspoon or a few drops of
