Ground Chicken and Scrambled Eggs

Saute the ground chicken in butter of olive oil.  Break it up with a spatula as it is frying.  When it is thoroughly cooked set it aside.  Make scrambled eggs and add the chicken to the eggs.  Season will with salt and pepper.  Serve with corn chips.

Cornbread Pudding French Toast Skillet Casserole

Sweet Cornbread (make night before) • 2 cups yellow cornmeal* • 1 teaspoon kosher salt • 2 teaspoons baking powder • 1/2 teaspoon baking soda • ¼ cup maple syrup* (or adjust to your sweetness ) • 1 cup buttermilk • 2 eggs* • 1 cup creamed corn* (homemade preferred!) • 2 tablespoons butter* Preheat oven to 425 degrees. Place a 10-inch cast iron skillet into the oven. In a bowl, combine the cornmeal, salt, baking powder, and baking soda.

Chorizo Breakfast Burritos

Ingredients  ooking spray 3/4 pound chorizo sausage, casings removed and crumbled 1/2 cup chopped red onion 1 green chile pepper, seeded and diced 4 eggs 4 flour tortillas 1 cup shredded Cheddar cheese

Egg and Cheese Puffs

This recipe came from All Recipes.com.  It looks awesome and lends itself well to our CSA ingredients.  You can sub sausage for bacon, and serve with some homemade salsa!

Ingredients

  • 1 pound bacon
  • 10 eggs, beaten
  • 1 (16 ounce) container cottage cheese
  • 1 pound Havarti cheese, shredded
  • 1  diced green chile peppers
  • 1/2 cup all-purpose flour
  • 1/2 cup butter, melted
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt

Easy Breakfast Casserole

This is not a typical "recipe" but rather a general cooking idea.  We have made this on Sunday mornings and it is super easy, and a good way to use slightly dry bread. Start with a baking dish.  An 8 inch square works great.  If it is not non stick, spray or butter it.  Tear up enough slices of bread, English muffins, or other bread items to cover the bottom of the pan. I cook about half a pound of bacon.  Drain

Baked Eggs With Sausage and Tomatoes

I can't remember where I first saw this recipe.  It was likely in Southern Living magazine.  I saw a version on About.com as well as some other recipe site as well.  This version has been tweaked over time and I now use only Fresh Fork Market ingredients.  It makes a great dish for brunch.

Deviled Eggs

P. Bosley:  I use the Julia Child method when making hard cooked eggs. Place the eggs in a pan and cover with cold water. Choose a pan that has a tight fitting lid. Bring the water to a boil. Turn off the heat and place the lid on the pan. Allow the eggs to sit for 18 minutes. Remove the eggs to a bowl of ice water. When the eggs are completely cooled remove the shells. Slice the eggs in half. Try some variations of deviled eggs.  Separate your yolks
