Provençal Inspired Salad

This tasty salad is found on High Ground Organics' website.  With the sweet dressing, it would be tasty with kale instead of spinach.  It would do well with a crumbly cheese, too like feta.   INGREDIENTS:
3 cups red leaf or red butter lettuce, washed, dried, and torn into bite-sized bits
1 bunch spinach, stems removed, well washed and dried, torn into bite-sized bits
1 pound filet beans, yellow or green, topped and blanched in boiling salted water until crisp-tender, then plunged into ice-water to stop

Black Bean Burgers

For those who attended the cooking class, this is the black bean recipe that we made.  It is great as a burger or as a stuffing for peppers or whatever.  We used our own cooked black beans and homemade salsa, but pantry items would work in a pinch.  Thanks to Chef Robin Blair. Pickled Green Beans

I had several people tell me they have a lot of beans and aren't sure what to do with them.  Whenever you are in doubt as to what to do with something, my fall back is always pickling.  I love pickled vegetables as a snack, and adding interesting pickled vegetables to a relish tray takes it to a new level.  When I make a simple pasta salad for an event, I toss Italian dressing with pasta and throw in pickled vegetables. Baked Cranberry Beans with Parmesan

I had people asking about how to prepare cranberry beans.  These beans are an heirloom variety of bean that is popular in Italy, so you are likely to see Italian style dishes with them.  This recipe seems like a delish dish that would be good as a side or a lovely vegetarian main dish.  Mangia!  Adapted from Delish.com   Ingredients
  • 1 pound(s) bag dried cranberry beans
  •  4 oz bacon, diced
  • 2 medium onions, diced
  • 1/2 cup(s) extra-virgin olive oil
  • 1/2 head(s) fennel, diced
  • Salt and pepper, to taste
  • 1 can(s) (6 ounces) chopped plum tomatoes
  • 6 clove(s) garlic, roasted
  • 1 sprig(s) thyme
  • 1 sprig(s) rosemary
  • 1 tablespoon(s) flat-leaf parsley, chopped
  • 1  bay leaf
  • 4 cup(s) chicken

Salad with Beans

This is my favorite salad-meal.  Arrange lettuce leaves on a plate.  No Dressing.  Drop about one half cup of cooked beans into boiling salted water.  When the beans are hot, strain them and place them on the lettuce leaves.  Top with a poached egg.  Season with salt and pepper and drizzle olive oil over the salad.  Timing is everything.   The warm beans, mixed with the creamy poached eggs and the olive oil are great with the crunch of the lettuce.

Black Beans

Soak the beans overnight or at least four or five hours.  After soaking, rinse the beans a couple of times with cold water.  Place the beans in a pan and cover with water.  Bring the water to a full boil.  Boil for two or three minutes.  Strain the beans and start again with cold water.  Bring to a full boil.  Lower the heat to medium and cook the beans.  For two cups of dried beans add a half teaspoon of

Black Beans and Sweet Potato

Thanks to the awesome Diane Virosko for this recipe.   Ingredients 1lb dried black beans about 2 cups, rinsed and soaked over night 1lb smoked ham hock or shank 2 bay leaves 4t olive oil 1 yellow onion shopped 1 medium sweet potato chopped into 1/2 inch pieces 1/2 carrot chopped fine 1 celery rib, chopped fine 1/2 tsp cumin 1 tsp chile powder 2 cups chicken stock(I used ham stock) I put the bay leaf in with my beans, and cooked the hock with the rest of the ingredients in the crockpot.
