Rutabaga Apple Salad

Colorful, sweet, and crunchy, this salad is a delicious accompaniment to any meal, and is awesome for potlucks and parties because it makes a ton.  I've made it a million times over the last couple of months, sometimes omitting the currants, swapping out pumpkin seeds for sesame seeds, and omitting the maple and using some English Toffee Stevia ilquid instead. Sweet Potatoes, Apples, Onion and Carrots

After having had plenty of pureed sweet potatoes during the Thanksgiving Holidays here is an interesting variation.  Thanks to chef Adam Lambert of BarCento who gave me the idea.   Peel and dice equal amounts of sweet potato, apple, onion and carrot.  This should be a small dice.  Combine the sweet potato, onion and carrot in a sauté pan with olive oil and some dried thyme.  Keep the heat at medium or medium low.  The idea is to soften the vegetable without

Apples, Kale and Beet Salad

Shred enough kale to make two cups.  Blanche the kale in boiling salted water for 2-3 minutes.  Refresh in ice water and dry.  Peel and slice an apple.  Slice two or three cooked beets.   Make vinaigrette: 2 TBS orange juice and/or Balsamic vinegar; or lemon and Balsamic 1 TBS olive oil Salt and pepper   Toss the kale, apple and beet with the vinaigrette.

Creamy Broccoli and Apple Slaw

From Real Simple Magazine.

Ingredients

  • 1/2  cup  plain low-fat yogurt
  • 1/4  cup  mayonnaise
  • 1  tablespoon  cider vinegar
  • 1  small shallot, finely chopped
  • kosher salt and black pepper
  • 1/2  bunch broccoli, finely chopped (3 cups)
  • 1/2  apple, finely chopped
  • 1/4  cup  dried cranberries
  • 2  tablespoons  toasted pine nuts

Directions

  1. In a large bowl, stir together the yogurt, mayonnaise, vinegar, shallot, ¾ teaspoon salt, and ½ teaspoon pepper. Add the broccoli, apple, cranberries, and pine nuts and toss to combine.

Grated Turnip and Apple Salad

1 c Peeled & grated raw turnips 1 c Peeled & grated tart green - apples 1/2 c Chopped fresh parsley Juice of 1 large lemon 1 tb Vegetable oil Salt & pepper Combine all the ingredients. Toss wll & chill, covered in the refrigerator.

Mom’s Fresh Apple Cake

This is a family recipe that I have loved since I was a kid. I often skip the nuts & have made it with coconut, too -Robert   3 C Flour 1 tsp baking soda ½  tsp salt 2 C sugar 2 eggs 1 ¼ C oil 2 tsp vanilla 3 large apples 1 C walnuts   Preheat oven to 350 degrees. Grease and flour Bundt pan. Sift dry ingredients together and set aside. Whisk liquid ingredients together and set aside. A Treat

Mayfield Road Creamery "Bloomfield," a brie style cheese   For something a little different, place the cheese on an oven-proof dish.  Put the cheese in a 350 degree oven for about ten minutes or until it is soft and warm…starting to melt.   Drizzle the cheese with a little honey and serve with wedges of Gala apples.  That’s fall in Ohio, for sure.

Sweet Potatoes and Apples

If you still have apples and sweet potatoes in your pantry, try this dish as a way to use them up.  Peel and boil your sweet potatoes until tender.  Slice.  Slice your cored apples.  In a buttered baking dish, layer the slices.  Mix equal parts sorghum and hot water.  Sprinkle with cinnamon and a dab of butter.  This is a great side dish with pork chops.  This is an easy recipe to remember.  For each potato use one good sized

Turnip and Apple Slaw

If you are at a loss for how to use the turnips in this week's bag, try this simple slaw recipe.  Of course, this is the basic version, so you can make it completely your own by adding whatever spices fit your palette.   Peel and grate equal amounts of raw turnips and apples.  For every four cups of turnip and apple mix, stir in 1 cup of chopped parsley.  Juice a couple of lemons or add 1/4 to 1/2 cup vinegar
