Turnip and Apple Slaw
If you are at a loss for how to use the turnips in this week’s bag, try this simple slaw recipe. Of course, this is the basic version, so you can make it completely your own by adding whatever spices fit your palette.
Peel and grate equal amounts of raw turnips and apples. For every four cups of turnip and apple mix, stir in 1 cup of chopped parsley. Juice a couple of lemons or add 1/4 to 1/2 cup vinegar ( try using your favorite vinegar here. I like sherry vinegar if I don’t use lemon). Add a couple of tablespoons of oil, salt and pepper, and your favorite spices. Toss and cover and serve chilled.
Try your own variations. Try herbs de Provence and garlic with olive oil and lemon. I like to use sherry vinegar and lots of garlic. In the summer, I add peppers. You can try using red pepper flakes and apple cider vinegar. This recipe is very flexible.
